Produced by Evelyn Tabora at Finca Siete de Julio in Copán, this honey-processed Pacamara reflects the extraordinary growing conditions of the Western Sierras, where rich soils, natural shade, and a unique microclimate come together to produce remarkable coffees. Evelyn and her husband, Hector, have transformed their family's third-generation farm into a model of specialty coffee excellence while creating meaningful opportunities for their local community. This second harvest pick underwent a 24-hour fermentation followed by honey processing, resulting in a cup filled with notes of red florals, apricot, honey, and caramel.
